辣油青瓜炒雞柳 ( Stir-fried Chicken and Cucumber in Chilli Oil )

材料
急凍雞腿肉1塊(約半斤)
小青瓜2條
蒜肉3粒(拍鬆)
紹酒2茶匙
椒油茶匙

醃料
生抽3/4湯匙
糖半茶匙
粟粉1茶匙
麻油2茶匙

做法:
01 雞腿肉解凍,洗淨,抹乾水分,切條,下醃料拌匀待半小時。
02 青瓜切去頭尾兩端,洗淨,切片。
03 燒熱鑊下油,下蒜肉炒香,加入雞柳炒匀,灒酒,加水3湯匙煮3分鐘,加入辣椒油及青瓜片炒片刻,以红辣椒絲装飾即成。

Q:灒酒有何功效?
A:烹調急凍食品時,灒酒有效去除冷藏味。

Ingredients
1 frozen chicken thigh meat
(about 300g)
2 small cucumbers
3 cloves garlic (gently crushed)
2 tsps Shaoxing wine
1 tsp chilli oil

Marinade
3/4 tbsp light soy sauce
1/2 tsp sugar
1 tsp cornstarch
2 tsps sesame oil

Method
01 Thaw the chicken meat. Rinse well and wipe dry. Cut into strips Add marinade and stir well. Leave it for 30 minutes.
02 Cut both ends off the cucumbers. Rinse and slice them.
03 Heat a wok and add 1 tbsp of oil. Stir fry the garlic until fragrant. Put in the chicken and stir well. Sprinkle wine. Add 3 tbsps of water and cook for 3 minutes. Add chilli oil and cucumber. Stir briefly. Garnish with red chillies. Serve.

Q:Why do you sprinkle wine on the food when stir-frying?
A:Adding some wine in the stir-frying process helps remove the unpleasant taste commonly present in frozen food.
